Put MaxAir vent covers over all vents in the roof, even the bathroom vent and including the fantastic fans.
Always leave one vent cracked open to allow air flow in the camper night and day. Unless your in a very humid area, I can’t see why you would need a dehumidifier.
You may want to put a hyper vent mattress pad under the bed mattress so there is air flow under there. Some people complain of moisture / mold under the mattress. My Northern Lite came with that pad as standered equipment.

To keep cool at night you don’t need the AC blasting away. The trick is, close all windows and vents. Then slightly open the window beside where you are sleeping. Then if your fantastic fan is like mine ( remote control) in my Northern Lite, start up the fantastic fan 100 % fan speed. Then slow the fan down to about 50%. The draft the the fan will create will pull a small breeze by you in your bed.
We ordered our Northen Lite with out a AC, as we never used it in our prevouse 5th wheels so why carry the extra weight. The NL camper comes wired up for the AC so if we ever want to install one we can.
Unless you cook a lot with a Microwave I would get one. In my camper, again we ordered ours with out the Microwave as it is a waste of space inside a cupboard. All we did in our 5th wheels was store bread in the Microwave, and free cupboard space is hard to come by in a camper.
Get the camper equipped with 6volt batteries, the last longer when dry camping.
