When it's hot and you can open the windows or run the air/con, it's a non-issue.
It's when it's cold out (and even parts of florida can get cold enough in winter), you run into a problem. Obviously, you don't want to run the air/con when it's 35F at night and you also, likely don't want to open the windows.
Fans will help reduce condensation.
A dehumidifier would help but in a truck camper, there isn't a lot of space for one.
