In years past, you could get Tahoes and Suburbans with diesel engines. Does anyone know, are they still available?

No, the last OEM diesel Burb was model year 1999.
There are several companies that do conversions - DuraBurb is one. They graft a Duramax/Allison powertrain into a 2500 Burb. Upside is huge increase in towing power and an OEM look with everything working as it should. Downside is a loss of payload capacity due to the added weight of the engine and transmission.
