Someone walks into a lawfully and correctly parked vehicle and it's the driver's fault?????
But you are right. You could get sued. Anyone can sue anybody for any reason. What the law says is irrelevant. Who would prevail in court is another matter, but win or lose you just spent months in a legal stressful hell spending thousands of dollars on lawyer fees.
As for crossing chains -- read the state vehicle code for yourself. Do not take any one elses word for it. Even judges look up the exact statutes while prepping for a trial or hearing. Lot boys at the RV dealer do not. Your neighbor's barber's brother-in-law did not. In CA it is recommended, but not required. What is required is the trailer tongue must not contact the ground if it becomes detached. If your particular configuration works without crossing chains, then you are legal. I cross mine anyway even though it is single point attachment and crossing does nothing. One less thing for a lawyer to use as a weapon in court. I may still get sued, but I try to make it as hard as possible to dig for an issue.
