dodge 3500 cummins clutch fan engages on flat with no load

I've had this 2003 for just a month, still figuring things out. With the AC on, running empty on flat ground at 60mph the temp rises to about 210 and the clutch fan engages until the temp drops. ...

In dash guages can be off by as much as 20 degrees either way. Typically only a few degrees off but on one of my trucks the temp guage read 10 degrees low.

There is a product by Royal Purple called Wetter Water. I've used it and it helps keep the temps lower when towing up a grade. You just add it to the radiator and enjoy the cool.
