My hunch is the water pump. I am hearing a sqeeak from something on the serpeintine belt, the truck has 205,000 miles so it's about due, I'll check it tonight.

Someone would have had to swap that in, as 200° was not the stock temp. I would swap in a 190° just to be sure if you question in.
What temp does it run going down the road on a cold day?
The water pump might be squeaking, but it will still pump water since it's a metal pump.
