I use a wireless electronic thermometer myself and it plainly states in the Dometic manual and Norcold manual not to load a fridge with room temperature food but pre coll everything and when I take frozen stuff like burgers or steaks along, they are rock hard frozen when they go into the fridge.
I too run mine on either shore power or propane for at least a day (24) hours or 2 days prior to loading it and I run it on the coldest setting. With the muffin fans assisting, I can average about 40 in the fridge, have no idea what the freezer is at but my frozen stuff stays frozen. I did replace the Thermister with a 'Snip the tip' adjustable Thermister a while ago.
I think a small muffin fan inside might help too but I don't want to be drilling holes in my fridge.
