I think it depends on how old your kids are. You could probably get away with two double bunks when they are younger. As they get older they will want their own beds.
We have two double bunks in ours. The three of them usually end up in the top bunk together. Up until the last trip where they all wanted their own bed. That was the first time I have folded down the dinette, but it makes a better sleeping space than the sofa.
