not a meal but a great sidedish
Cheesy taters in crockpot
1 bag 26 to 32 oz frozen hashbrowns (can be reg or the chunky country style)
1 can cream of chicken soup
1/4 cup fine chopped onion (i use a whole small onion)
8 oz sour cream
1 stick butter, melted
1 1/2 cup shredded cheese - i just use the whole bag of the 2 cup bag-
you can use cheddar,taco, colby jack, mexican or any mix you like of cheese Ive tried all kinds .. original recipe called for cheddar..
salt and pepper
mix all in a bowl an toss in crockpot
spray the pot REALLY GOOD with non stick spray or use the crockpot bags. They are easy clean up while camping..
cook 4-5 hours on low or until taters are done.In a hurry ive cooked it on high for an hour then medium for till done..
alternative is in the oven 350 for 50 min.
We have added cut up sausage links to it as well sometimes an its really good. Just add that after its almost cooked as the sausage will take over the flavor.
My daughter adds cut up leftover hotdogs cooked on the fire to her plate and mixes it up. She likes it lol..
I mix it up at home , put a twist tie on the crockpot bag an put it in the fridge. Then after we get set up i open the bag , put it in the crockpot and turn it on.. Good to go for supper..
