Whatever you do, get everyone involved, some prep and cook, some cleanup. Seems wives all too often get stuck with cleanup. I know I am terrible at letting my wife do cleanup. She wants to get away also, so if everyone pitches in, it goes much better.
When we had kids at home, we had them do the planning and cooking on some of our vacations. We had an annual vacation to Cannon Beach on the Oregon coast, each one got to plan and pack the food for the week.
One year, our oldest had planned the meals and packed the food, she ended up getting asked to go on tour with the Seattle Cascades drum and bugle corp on their DCI tour, 26 states, 13,000 miles. She left on tour and we left on vacation. We could not find the meal plan (we had them write it all down for the whole week)... no worries, we had plenty of food. When our daughter got home, she was unpacking and putting things away and found the food plan in her tour gear... We all had a good laugh.
Be flexible, sometimes things change, don't have things so rigid that some of the campers get angry over a change in plans.
