This is not complicated. You know what you like to eat for each meal. We bring along breakfast stuff - cereal, oatmeal, fruit, eggs, stuff for pancakes.
For lunches, we bring one kind of deli meat and cheese - turkey and Swiss for example. We also bring snack stuff - chips, trail mix, apples. And any condiments we would need.
We only plan dinners and bring what is needed - most times we already have it in the pantry or fridge - spaghetti, hamburgers, hot dogs, chicken, salad stuff and usually a frozen pizza. And yes, although we are camping, we plan on eating out at least once to sample the local cuisine - it's nice for a change.
We have ice cream for dessert. We always have enough wine.
And if we forget something we find a grocery store. Back home, we put the unused food back in the pantry/fridge. It's not written that everything needs to be consumed on the trip.
The only thing you really need to be worried about is bringing enough beer!
