Like others have said, depends on the trip, and for us, who we are with. If we're with the in laws, they like to drive into towns to eat sometimes. But if it's just us, I plan for 2 meals a day, along with some snack stuff. Nothing really fancy though.
On our last weekend trip, our dinner the first night was quesadillas. I buy a rotisserie chicken at Costco and "pick it" before we go. Anything we don't use on the trip, I freeze for later when we get home. Anyway, chicken, tortillas, canned olives, cheese, and salsa for dipping. I've also done "pizzadilla" versions with marinara, cheese, and pepperoni. Breakfast the next day was a hash made with frozen potatoes, smoked sausage (cooked the potatoes in the pan after browning the sausage), bell pepper, and over easy eggs on top. Dinner was hot dogs with chips. I also keep frozen burger patties around on most trips if we need an extra meal but we tend to only eat 2 per day, with a few snacks.
On other trips when I'm cooking for more people, I've purchased marinated chicken in vacuum sealed packs from Costco, and grilled that up, along with some grilled mini peppers and a pre-made pasta salad (I like the italian tortellini one from Costco, that could be a meal by itself). The cooked chicken that isn't eaten can be frozen for later, and mini peppers are usually eaten up as snacks. I love pasta salad so that never goes to waste :) For quick breakfast, I've also premade sausage balls (they can be frozen) and then just reheated in the camper microwave.
This is all cooked on our Coleman grill outside, I don't really like cooking in our current camper kitchen as it's tiny.
