On the crest of most hills, or summits I slowly lift off the throttle letting gravity scrub off about 5 miles an hour right at he top to ease the transition as well as get a visual of the descent, upcoming turns etc. If timed right it makes the drive much smoother allowing for a downshift, or exhaust brake application depending on your system. I do a similar thing using the last bit of the downhill to gain a couple of mph to assist a smooth roll into the throttle into the next ascent. I really like pulling in this type of terrain as I practice getting my rhythm. I find it gratifying when I get it right. An overactive exhaust brake would annoy me, like a bad dance partner. Maybe ShinerBock's suggestion of using the "auto" setting will help you too.
