I bought a Softopper over the summer and have been extremely happy with it. I'm in your boat - most of the time I want an open bed. It works better as a truck and looks better, and I don't have impaired visibility. But for trips with the family it's awesome to have a weather protected huge cargo area out back.
It takes about 5 minutes to put up or down. You can leave it down on the truck and it basically looks like a rolled up tonneau cover behind the cab in that position (with storage bag). Or pull two cotter pins and remove it entirely. When deployed I've had no leakage except around the tailgate as you would with any topper, and I've had it in temps down below zero with no issues aside from the vinyl getting a bit stiff. I've also run it at 82 mph on the freeway on a windy day with no flapping at all.
The trade-off is security, but for my purposes it's been a great solution. I did a more complete review in this forum if you want to search for it, with pictures.
