I have pulled some moderate hills in Michigan towing the boat without breaking a sweat and will be taking it to Tenn to my BIL's this Sept. so we will see how it handles the mountains on I-75 through Kentucky and Tenn.. But I do not think it will have a problem at all.

It is not about winning races. It is just wanting to be able to keep within 5 mph of the speed limit for what I tow. Like I said earlier, some peoples have different expectations.
Not sure why you are not understanding this but towing within my trucks limits and 6800# is 1000# under my trucks limit, I can run 70 MPH and more if I feel like it. No I have not driven/towed the Ike and have no plans to. But considering ALL of those grades and even ones on I-75 have truck lanes if I could pull it at speed, I would just move over to the right lane and not sweet it.
