My experience (from years ago) is that there are brake shops that use impact tools to not only remove things, but to install them. Since OP had stripped threads on caliper, I would expect that the bolt missing had been installed with impact tool and overtightened. I never use impact tools to torque bolts, I might "snug" them up with air tools, but use torque wrench or ratchet to finish.
Regarding the noise and continuing on, one of my daughters had a car with rough rotors on back axle and it sounded terrible when you put the brakes on. It stopped fine, just was noisy. We ran it that way for a few weeks until we had time and parts to do a complete brake job with new rotors. All good.
