I don't over-think it. I usually keep a notepad in the RV while out with things I need to buy before the next outing. Once at home I move the list to my workbench and add all of the things I need to bring. While packing I put everything I need to bring on my bench and always look at the bench before I leave to be sure I have everything I need. I rarely find myself without something I meant to bring but constantly worry anyway :)
