Yep, that's the problem. My 2016 F150 3.5 EB 4x4 has more than 500 pounds more payload. Better towing power too, and factory tow package (not max tow) means I have the transmission cooler, oversize radiator, 36 gallon gas tank, etc. The only options I have that add weight are the running boards - factory installed so they don't take away from my payload. I just put on a 25# tonneau cover, so I have to take that off my CCC, but that still leaves me with 1752 pounds.
And with the X213, my trailer is 1000 pounds less (~120# less tongue weight) than the one you are looking at. Since most of my towing is in the Rockies, I really wouldn't want to pull much more. The truck can do it, but it would be less fun.
Just FYI I have the big gas tank/factory tow package/trans cooler that you have also just not max payload.
