My 2018 Ford F-350 Limited listed an owner-installed trailer back-up camera and tire pressure monitor as optional accessories. Are there aftermarket cameras and TPMS that work with the Ford system?...

AFAIK there's no aftermarket systems that integrate with the factory system. There are of course lots of aftermarket systems that have their own screens.
The Ford factory systems can be installed as accessories, ie don't have to be built with them at the factory. You can order the parts and install them yourself or have a shop/dealer install them. There's kits for the camera piece and also the TPMS sensors. So possible that the owner installed the Ford system which would be integrated with the factory electronics.
