Since your preferred camping is in State and National Parks, if it were me, I would go for as large as possible holding tanks. We do State & National parks as well as BLM land boondocking dry camping. We have an 18CK model that has 50 gal fresh, 50 gallon gray, and 50 gallon black tanks. For long stays, with a little attention to minimizing the amount of water used and where it ends up, we never have a tank capacity problem.
If you are only going to the parks you describe, you can go with smaller tanks, and minimize waste water by using the toilets and showers in the park.
I would not recommend the trailer you are considering.
