Your experience while valid is an outlier of statistical data. I have never heard anyone else comment as negative as you about GM's 6.0L/6-spd combo. That makes me believe you can change something to improve your experience or you can change your expectations. I would first recommend using the transmission's tow/haul mode and M5 or M4 depending on terrain and target speed. For naturally aspirated small block engines, you should keep the engine above 2500rpm when cruising and 3000-5000rpm for accelerating and hill climbing. The 6.0L will do that comfortably for 300k miles.
I tow my 6500-7000 pound TT with the same 3/4 ton Suburban at 65-75mph in 5th and 4th gears (sometimes 3rd for hills) for both in state weekend camping as well as a couple 2200 mile trips through Application Mountains. I do this with 3 rows of comfort and sleeping family. We used our Suburban as a daily driver and main family vehicle for 100k miles. We get 13mpg in mixed commuting in the summer and 12mpg winter.
I expect Ford's 6.2L to be negligibly different in all aspects. Peak torque and HP are at similar engine speeds. Transmission gearing is almost identical so you'll be in 4th ad 5th gears towing anything high walled.
