What amp circuit breaker is on the AC? If 20a then the Champion 3100 will for sure start and run it. If 30a breaker then you would have to know the draw of the A/C--and also if the Champion really puts out the full 3100/2800w. Either way I'd expect the 3100 to start the AC by itself, and run it with room to spare once started.
I know I can run my microwave and (13.5 btu) AC at the same time--after the AC has already been started. My AC is on a 15a breaker.
In any case unless you have a generator with as much power as your shore power connection (30a/50a) you will have to manage power if wanting to run the AC. Even without the AC you might find something that draws more power than expected. In my case I have one of the older Keurig coffee makers and that thing is a power hog (it's big and makes a lot of noise and vibrates). I can't even run the microwave and it when it is in heating mode.
