Generator
I am looking to put a generator on a folding cargo rack on the hitch of the TT when I get it, I want to also be able to run it while it's back there (good idea or bad) because I plan on building a cag...

Again, each person has to put CO risk into some kind of perspective that works for them. There are risks and there are opinions, but there are no guarantees.
I won't dispute your genturi story because I was not there. However once the heated genset exhaust is above the roof line it typically dissipates into the air above and does not just fall back down.
Genturis are required at many Rally's and tailgates where all types of RV's are parked in very close proximity of each other. If they did not work or were not foolproof I don;t think they would be required.
I have had exhaust enter my trailer from my own rear platform mounted genset.
I have witnessed exhaust work its way inside from an onboard Generac.
CO does not come in every time, I have no real stats but from my experience CO seldom comes in. However there is always a risk. CO is not to be fooled around with. I will not sleep in the RV with genset going without using a Genturi.
Bottom line, you're very comfortable with the protection a Genturi offers. That's your choice and I have no qualms with that.
