Really? What is your personal experience that has the Tundra towing at such horrible MPG? If you say 8-10, that's typical all day long for any truck towing. 6-7mpg, now your getting down there, and this is not typical of most trucks.
Now as far as towing goes, the OP's estimated 7500ish trailer could have a fair TW of 750-1000lbs, which leaves 500-600 for the family. Gear can go in the trailer. No problem.
If in doubt, don't just look at "payload" look at the actual weights on a scale, of which payload comes from. A scale will tell you the facts.
As far as length, I would agree that is excessive length for a long haul. But every truck, and every trailer, could handle differently.
There is no BLACK or WHITE answer to what the driver will be comfortable towing.
