Sink water with food particles and grease can be very stinky and will attract animals which is one of the reasons dumping gray water on the ground in many places is illegal. You can probably get away with using a solar shower outside and letting the water soak into the ground but if your gray water tank matches the fresh water when you're out of water you'll also be ready to dump. Dump stations will usually have fresh water to fill your tank.
Someone already mentioned the benefit of having the door opened when camping to provide light and ventilation. If you have the door opening inward it might be difficult to install a screen door which is a necessity.
