We have a single 100 Watt panel now and it does help but when out in the woods we slowly lose the battery charge battle.
I would go for 2 Kyocera 140 watt panels. Your controler should be able to handle that output. Even though the panels are rated 140 watts, in the real world, you might actually realize 100 watts from each of the panels. It will be extra power on the best of days but on most days, in the woods, clouds, rain, northern latitude, the other 9 months of the year, the two 140 watt panels should serve you well. I would also consider installing the large 4 AWG charge cable from your alternator to your truck camper batteries. Also consider the installation of LED lighting. Every bit helps.
We run two computers, charge phones, reading lamps, run the furnace. My rule of thumb is maximum comfort. I figure we have at least two weeks of propane when we head up into the woods and were going to have steak, ice cream, heat, and all the trimmings. That's fun in the wilds!
