I use a mirror that attaches to my tailgate. Can usually hookup in one try and only have to get out of the truck one time to check the vertical alignment. I have painted the top of the stinger and the top of the opening of the Hensley white so it is very easy to see when they are lined up.
I have hooked up in many off camber situations and never had a problem. As mentioned earlier by goducks10, if the truck and trailer are at an angle that puts the truck going sharply uphill or downhill to the trailer, you may have to back up & raise tongue a couple of times in small amounts to get the stinger in. It really is not hard at all! :)

Here is what I use.
