You'll be fine hauling a dirt bike on a 2' extension and the Dodge hitch will handle it. I've run thousands of miles in the last couple uears with a 2' extension hauling a hitch carrier with close to that much weight and also towing a 3500lb enclosed trailer. Rough roads, frost heaves, off road, sort of.
Only downfall is the rocking in the hitch, which will again hold up ok but will put wear and tear on the receiver.
