I was just able to check the payload on a 2500HD LTZ Crew with standard box and it was 3032 lbs. I will hopefully find a 3500HD SRW and DRW to check.
Based on info I've seen, For 2020 GM classifies the 2500HD as a class 3, same as the 3500 so they are no longer restricted to a GVWR of 10,000 on the 2500's. So, for a 2500 GVWR is limited by the tires, axles and springs, which pretty much put it the same as the previous 3500SRW at around 11,500 in diesel configuration.
And I suspect there is an option for a 10,000GVWR for applications that want to stay at 10,000 or under.
I suspect if you look at a 3500SRW the GVWR and payload will be the same or within a few hundred pounds. Somewhat may depend on what tires are on the 2500.
