Sounds like chucking to me too. Take a peek at the towing mileage video IB516 posted. Not a smooth ride, especially in one truck. Road surface, wheelbase of 5th wheel, location of hitch in truck and weight distribution in trailer can all affect it. Mostly a not too uncommon characteristic of towing a 5th wheel/gooseneck.
