Is my Ford Escape worthless for fullfilling my dream? :-(

I have never driven or towed with a Ford Escape but like yourself it would be interesting to know exactly what they are good for, when set up optimally.

Thinking you need to talk with a "Towing Specialist", someone who has set them up, test driven the rig, and who can summarize the experience.:)
