How I use it when towing. Exhaust brake on and tow haul on. If I am descending a hill just let off the gas and the EB will slow me down. When I get to the speed I want to be at I touch the go pedal lightly and maintain that speed.
When climbing a hill I find that if I am doing 65 the truck generally will downshift to 5th and have enough RPM's to maintain speed. If I am doing 55 the truck will downshift to 5th but the RPM's are too low to maintain speed and for some reason it does not want to drop to 4th. That is when I use the +/- button to drop it to 4th gear. I no longer wait for the speed to drop very far. I know it is going to do it so I shift to 4th as soon as I get down to 55 mph. Remember to move it back up to "D" when you start topping the hill.
