Sounds about right! I'm sitting in Camper Village at Cedar Point in Sandusky OH. I left from the Chicago area over to Niagara Falls ON. And now at Cedar Point. I averaged approx 7 mpg so far. The shifting you describe sounds normal. Let it shift down and rev!, that is where a small block gas motor does all the work! You will never see 6th gear towing 8000lbs. Even 5th will be touchy on the flats with a slight headwind or incline. Mine will run at 3200rpm all day at 65-68 and get 6.9 mpg.
Nothing wrong with towing at 65mph with ST tires provided they are a good brand and in good shape.
