Who has replaced their stock air filter with a K&N? Are they really better? Improve performance, gas mileage, etc.

Can't even begin to fathom how this comparison comes into play. It's like comparing a Ferrari to a Ford Pinto. Completely different circumstances and usage. After 100k of normal usage (i.e., NOT racing) every engine loses compression. Is it more with a K&N? Probably a bit, but not significant enough to warrant any concern.
