I would not be using Galvanized.
I would use white plastic threaded fittings.
I would use a Shark bite type fitting for the conversion from PEX into the tank. Maybe a Seatech 90 like this (2420)Seatech
The "rusty" fitting could be a check valve. Many have a check valve there to prevent hot water from going back into the cold water line.
