For me, I could see part of the difference being the actual heater. Mine has to be turned on and lit from outside of the RV. I don't want to have to get up out of my warm and cozy bed, go outside in the cold to light the heater, then wait for X amount of time for the water to heat so I can wash up. Likewise, I don't want to have to repeat the process so I can wash dishes after each meal/snack. Might as well just heat my water on the stove.
My heater is the same, I would need to go outside and light it. I never boondock, so I installed an electric element into my existing tank (Hott Rod) and leave it turned on while plugged into shore power.
