I load and unload on uneven ground a lot at home. It helps tremendously to have an experienced spotter and to go very slow. The truck may look lined up perfectly going in but then you need to adjust while halfway or further under the camper due to the uneven ground. It's amazing how much you can adjust without giving up and starting over.
Most of my adjustments end up being something like turning the wheel all the way to the right and move about an inch or two, then straighten out.
It's certainly not a fun exercise but it can be done, depending on how uneven the ground is.
