I carry an assortment of pressure treated cut deck boards in my side compartment just for that scenario. Mine don't fit as tight (glad of that) and usually, if the ground is uneven, I just take my tie down's off and level the camper wit the truck under it.
I've offloaded my camper on a slope before and it takes some skill with the jacks to get it off and on again but it's certainly doable, just takes time and concentration.
