Loading/unloading on uneven ground
I have a 10'2" NL that fits snugly into the bed of my SRW Ram. I have about 1/2" on either side of the camper to the tailgate latch points. I have never loaded/unloaded anywhere other than pavement ...

I don’t understand the problem? You have 4 jacks, lower each-independently-until they touch the ground. You have now negated any delta in topography. Raised all 4 jacks simultaneously from this point.

You are overthinking.
I prefer NOT to use a ‘spotter” or any “help” for that matter. I much prefer to load/unload alone so I can focus.
