I tow 6000-8000lbs with my Hemi on a regular basis.. I have the 4:56 gears w/35" tires and an older heavier truck and I can say it does fine on the flats but does like to downshift and sing in the hills - which is no problem, you just can't be afraid to let it rev and drop into 3rd gear. So with a newer & lighter truck I would think no problem in your case :)
And yes - 7-8 mpg is normal for any gasser...
