I've actually thought about something similar only way more "redneck engineered". :B
There's an old defunct trailer on my property that has an itty bitty three way in it. I've thought about taking it out and using it as a portable, only strictly to make ice with....had it in mind to remove the insulating barrier between freezer and fridge and just let 'er freeze!
And FYI to the O.P.: on older fridges like mine, the door hinges are reversible...
