We also have a 2011 Jayco 256RKS and love it, except for the couch. Very uncomfortable IMHO. We're going to take it out before spring and replace it with two comfy recliners since it's just the two of us. We definitely love the floor plan though! It weighs in at about 7500 lbs all loaded up for camping. I pulled it with my old 2003 F150, and it did OK, but the new F250 we bought in 2013 is much better.
The newer F150's are much more capable, and if yours has the EcoBoost, or the 5.0 with tow package you could pull a 7500 lb trailer just fine. Good luck.
