Lots of good info from everyone on here - thanks everybody! Keep it coming!
Looks like most folks say 350 is adequate as is, but it's not really feasible to beef it up to the level of a 550, and the folks with a 550 seem to be really happy with their decision. Might look into a pickup bed so there's no worry with commercial plates or weigh stations wherever we go (still active duty) but I really don't want to give up the extra space of a utility bed (or some form of flat bed with custom boxes, Douglass-style custom bed, etc).
I'd have a tough time getting the wife to stay in it for any length of time without adequate storage for our toys so those boxes are important. I'm actually thinking of putting the battery bank and inverter in the boxes so I'd have the option of a TC or 5th wheel on the same truck without buying two battery banks and expensive inverters. (Have 690AH and a Magnum MS2000 waiting to install on the current RV.)
No current plans to take it to Mexico but who knows what the future may hold. What's the difference there...not ultra low sulfur? Any way to make it work, like with an additive? (Though I guess I'd need a subtractitive in this case...)

You hit on the reason I almost got out of the TC. Storage. I had the F350 Dually which was adaquate for my 94 caribou but had no storage for the rest of my camping gear ands extras.
Pop ups, tables additional fuel for generator and such. Decided to get a supertruss hitch and M1013a trailer. Solved all my storage needs. In your case an enclosed car hauler would solve the same problem. This of course requires a F550 ;{)for the additional safety factor.
