You asked about short-bed / long-bed ... I've been off-road camping most of my life, and the last fifteen years or so with a truck-camper. Believe me, you WANT a short-bed with about a max 8'6" camper on it.
Also, pop-ups are OK, but if you want to get in and out often, you'll not want to jack it up and down every time you stop. So, think hard-side. And the hard-side allows much better bath/shower facility.
Electric Jacks are much heavier to remove, but not much more difficult. Disconnect the power link -- and the rest is the same bolting.
Problems is:: Might be a time when you like "no jacks" but if you get into a situation where you need to take the camper OFF, say, to explore an area where you can't get in with it on, then what? I'd give a lot of thought to "no jacks"
In all my years of TC camping, very few times was the small amount of height an issue -- more often, it's width not height that creates problems in the back-country. ... just Monkey's two cents.
