We have a 16' Scamp Side Dinette a some what narrow bed in back, front shower & toilet.
Can't remember weights, etc. We towed it 3 years with a Ford Ranger smallest V-6, auto. We towed it in the Rockies without a problem.
Scamp's website says: Approximate weight 1750-2000 for a 16'.
Check/Look up Little Joe TTs, made in CO. Ponderosa might work, With Shower. Seems I mis-rembered on it having a shower.
They are small, but make into a large bed, very light.
