If this truck was a demo, then that means it has never been titled, thus the dealer will treat it as a new vehicle. They will claim it is a new vehicle being as the warranty has not kicked in yet.
As has been mentioned, if you feel that 15k miles on a "new" truck is worth $3k, then go for it. Just keep in mind that the mileage part of the warranty already will have the 15k in miles used up.
