Most of these trailers will fit the bill for you and should be in 1/2 ton range (maybe upper range) and definitely in 3/4 ton range. When I came up with the list there were a couple floorplans we are looking at: bunks with a rear dinette or bunks with a rear seating area like a couch. Us parents like to....."kill a few minutes of time at night" every once in a while lol so we wanted a wood door for the master. A surprising amount actually have a real door to the bunkhouse. There's a ton more that have only curtains, but we eliminated them. Crossroads has quite a few bunkhouses that were lightweight with curtains for the master in their Sunset Trail line. Just about all of the trailers below come with an outdoor kitchen. We never looked into the width of bunks since out little ones are quite small, so there might be some singles in there. One thing to point out. The Aspen Trail 3130QBS is now dealer stock only, so they aren't making any new ones.

Wow Proxim - that is a super helpful list! Thank you! And hilarious point about the wood door. Definitely something to consider for us too with two little ones. :)
So things have progressed a little more quickly than I thought. We (read: DH) came up with some additional requirements that knocked out a few contenders and made our list even more difficult. (fiberglass exterior, only LED lights throughout, exterior door to bathroom, trifold couch in bunkroom rather than dinette, leather couch and dinette cushions, outlets by the master bed with countertop below wardrobe, two entrances to master - etc), plus I'm super picky on the decor, and came up with a solid winner that met everything we wanted with little compromise. It is slightly longer (at 35' vs 33') than we originally looked at but the tradeoff was worth it to us to get everything else we wanted (we can still store in our outbuilding and still fit in most of the campsites at our local campground - the more remote 2nd campground will be off limits but we prefer the primary one anyway).
You know how everyone says when you walk in the right one you'll feel it? Well we did with the 2015 Keystone Premier 31BHPR
(Image button appears broken so here's the link to the floorplan - http://www.keystonerv.com/media/841571/31bhpr.jpg )
AND.....my DH negotiated a heck of a deal with a bunch of extras thrown in (slide awnings, weight distribution bar, extra battery, 2-30 lb propane tanks instead of 2-20 lb) and WE PICK IT UP THURSDAY! So super excited! So it looks like our shopping journey is complete. We hope to take it out for a test camping run next weekend.
Thank you all again for your help! Hope to be able to report back with a positive experience. :)
