Choices. I have been to both. I have spent days and weeks in the Smokey Mountains. I lived in NC for a while but have vacationed there several times. A lot of history, scenery, and just good old fashioned hills and valleys.
Zion - nothing much else like it. Utah has so many beautiful NPs. I am ready to go again.
My preference is Zion NP and all around it. If you get the opportunity, Bryce Canyon NP and Ruby's Inn Campground.
