About the generator, a Mach 8 will run no problem off a Honda 2200.
The draw you're seeing for the charger/converter sounds like max load, IE, batteries run down. It charges/maintains at a much lower rate when batteries aren't low. Just keep the big loads off while running the AC (microwave, other devices with heating elements) and it will run a small AC like that.
