One can stuff an 8.1 into that body style.....a 454 is easier. About 50 hp and 100 lb ft of torque more than the 350 you have. The 8.1 has more hp than a 454, but both are limited to around 450lbft of torque due to the 4l80e trans. As was the post 6.5td limited to 440 lb ft of torque.
Biggest issues I have frankly is the 4 sp trans. Yes you can build it up....but gearing sucks. If you can find a newer 6sp auto 6.0 motor, with electronics, get that to work. IMHO, that would be the cats meow.
The 6.5td would be too much work with the conversion IMHO. If you could start with a 6.5, then build the motor and trans up. That would work. To convert, no thanks. This is from a person that drove one for 200K miles mind you! You can get this into the upper 200 hp and mid 500 lbs ft of torque. That in almost ALL tests I have seen, have out done the 8.1/454 trucks in towing hill climbs. Not by much mind you, I would call more even, but still the 6.5 has out pulled the BB 8's. Especially if at elevation.
My thoughts. I've driven all but vortec 454's and the 8.1. I'M currently driving a 2000 C2500 with the same motor trans axel gears etc.
